We met while studying at the Institute for Integrative Nutrition and realized that we shared a culinary vision. We put our creative energies together to found Panela Productions- a unique lifestyle company that provides hands-on culinary education through workshops, cooking classes and community events. We celebrate the diverse culture and food in NYC and beyond - with an emphasis on using local, organic, and seasonally grown foods. We also provide support for individuals and families transitioning to vegetarian, vegan and raw-food diets. We have provided workshops and support for families struggling with picky eaters, food intolerances and allergies as well as assistance with creating healthy lunches and power packed breakfasts.

We work to improve the diets of young people and their parents. We are educated in all the dietary theories and both have thriving individual nutrition/ holistic health counseling practices.  Latham has been featured on Fox 5 news as an expert on organic food and kid’s health, and both Phebe and Latham are working on articles to be published in future additions of various health magazines.

Our approach to food is simple yet our dishes are sophisticated and bursting with flavor. Our relationship to herbs and spices and knowledge of their healing properties set us apart from other chefs and culinary educators. Phebe has been involved in her mother’s biodynamic and organic farm business and production of herbal remedies at Avalon Farm in Virginia. Latham comes from California having studied medicinal herbs, wild edibles, ethnobotany, and plant physiology, all of which aids our understanding of plants and their contribution to each meal and hence, overall health.

Individual Bios:

Latham is a graduate of both Columbia University, where she earned a degree in Visual arts and Environmental studies, and the Institute for Integrative Nutrition. She is a certified holistic health counselor, and a member of the American Association of Drugless Practitioners. She studied as an herbal apprentice, under a master herbalist in California beginning at age 7, learning about medicinal herbs and wild edibles. Today Latham mixes her passions of plant physiology, botany, holistic wellness, fitness, yoga, and cuisine into a lifestyle program that supports the various needs of her clients. Specializing in maternal and child wellness, Latham served as Program coordinator and head instructor for the Healthy Moms-Healthy Babies project for the B-Healthy organization. She has been featured on Fox 5 news as an expert on organic foods and kid’s health. She was a chef at a downtown yoga studio, where she prepared vegetarian, vegan, and raw food for yogis. She is passionate about educating others about food. Her favorite dish is sauteed kale with garlic and olive oil.

 

Phebe Palin is a certified holistic health counselor (AADP) and a licensed social worker with over ten years of experience in NYC working with children, adolescents and their families. She has worked for many agencies and within school settings in New York City; including the Children’s Aid Society, Partnership for After-School Education and Counseling in Schools, Inc.   Along with Panela, Phebe runs a private practice which combines her skills as a counselor and her passion for healthier living by focusing on a more holistic approach to making lifestyle choices - through individual and group counseling and food education. She also markets a variety of herbal remedy products grown and made on her mother’s organic farm in Virginia.  Phebe has two children, ages, 6 and 3 and lives in Brooklyn.
